Raven Place Gochujang – Fermented Chilli Paste
Like miso, this is a sweet, hot, and gently sour ferment designed to be used on everything, from toasties and soups to marinades and slow-cooked dishes.
Gochujang is a traditional fermented chilli paste made using dried chilli flakes (gochugaru), grains, and time. Known for its warm heat, deep umami, and vibrant colour, it brings balance and complexity rather than sharp spice.
We use this gochujang on our signature kimchi toasties, where it adds richness and depth without overpowering the other ingredients. After struggling with store-bought versions full of preservatives, additives, and unclear ingredients, we chose to make our own, simply, transparently, and with intention.
Fermented slowly in small batches, our gochujang is crafted to be confidently used across our menu, including gluten-free toasties, without compromising flavour or integrity. The result is a versatile, nourishing paste that reflects traditional fermentation while staying true to our regenerative, whole-food approach.
This is gochujang as it should be: balanced, deeply savoury, and thoughtfully made.
